Life with a toddler sure is interesting. 

Remote controls end up in toilets, toys are hidden in the trash can, workouts involve maneuvering around a 25 lb tornado and time available to food prep is reduced significantly. I still try to do a little bit on Sundays to get the week started right. I'll make one meal for myself, a loaf of homemade bread or some egg muffins for breakfast. and that's about it.

I absolutely rely on incorporating a bit of prepackaged foods and snacks into our day to help save time and have nutritious options on hand. Breakfast for me most mornings is a protein bar as we are headed out to his gym class, library story time or play date. Recently I've been devouring these delicious chewy chocolate chip protein bars from Pure Protein.

I love that each of their bars has 19 to 21 grams of protein and 6 grams or less of sugar. Adults should get a minimum of 8 grams of protein per 20 lbs they weight. So for me that's a minimum of 48 grams a day. Sounds like an easy to reach goal but since I don't eat meat and shy away from too much soy based foods (tofu, tempeh, etc.) then it can actually be a struggle for me to hit that on days I don't eat eggs.


So, I love trying out new protein bars and powders. I've been using Pure Protein for years because it's one I can actually buy in most supermarkets.  One of my favorite super quick and easy snacks has been this protein packed smoothie. One scoop of Pure Protein 100% whey protein powder, a cup of spinach, a sliced up frozen banana and either frozen strawberries or some cocoa powder depending on if I want chocolate or strawberry that night.
